I created my sourdough starter from scratch, just flour and filtered water, in September 2022. I had made a starter prior, and even a gluten free starter I only used for pancakes (which are THE BEST pancakes in the world). I'm not really sure what happened... but I remember there were starters before this current one I have. Probably in the realm of 2020 or 2021 when everyone was hopping on that train. Me included.
I didn't do a whole lot with sourdough back then. I do remember trying a rosemarry loaf, in pumpkin shape for Thanksgiving. Which turned out great. Other than that, i really didn't do much until much later.
Around June/July 2024 I wanted to start a sourdough business! I named it Baked by Emily. And looking back from now (which has been less than a year), I don't know what I was thinking?! I didn't do strech and folds, I overproofed dough! It was so sour because of that. Major shoutouts to my initial guinnie pigs of customers! They were SO helpful in teaching me what I know now, and MAN, how far my sourdough has come since there. It's a world of a difference! I can't believe I even SOLD those first "creations" to people. Bless their hearts! 😆
Through many much practice, I have grown and developed the technique that I think makes the best bread EVER. Never again will I buy bread from the store (SUCH crap compared to sourdough, in all aspects). Sourdough holds my heart. It is so satisfying to bake and especaily satisfying to eat! I hope you enjoy it as much as I do!
