Natillas de Leche
A creamy Spanish custard made with milk and egg.
You will need...
2 cups of milk
4 tsp of sugar
1 cinnamon stick, about 2 inches long
1 tsp of lemon zest
1 tsp of corn flour
1 egg
1 tsp vanilla extract
Procedure
Heat up 1 cup of the milk, lemon zest, cinnamon stick, and 2 tsp of sugar, but do not boil them.
Once it is hot, remove it from the heat and let it cool.
In a different bowl, separate the egg yolk from the white and get rid of the white. Add the rest of the sugar to the egg yolk and whisk until it fluffs up.
Add the remaining cup of milk and the cornflour to the egg yolk mixture and mix until there aren't any lumps
Remove the cinnamon stick from the warm milk and put the milk back on the stove to simmer
Add vanilla extract, and slowly add the egg yolk mixture and keep mixing until it thickens.
Pour custard into bowls and chill in the fridge.
