Gazpacho
Gazpacho
A simple, refreshing soup, with a variety of vegetables, served cold.
You will need...
2 lbs of ripe tomatoes
1 peeled garlic clove
1/2 of a white onion, cut into 4 pieces
1 sweet green pepper, rinsed, with seeds removed, and chopped roughly
A 6-7 inch long cucumber, peeled
1/4 tsp of cumin
3 tbsp of red wine vinegar
1/2 tbsp of salt
1 cup virgin olive oil
1 3-4 inch piece of french bread, soaked in a bowl of water.
Procedure
Take the bread out of the water once soaked, and squeeze out all the water.
Blend all ingredients together at high speed until smooth and creamy. You will need a very good blender.
Let it chill in your fridge until cold and serve.
