Natural wine has no legal definition, in the United States, but there is a growing consensus regarding what it is. For us at 8ARM, it means the wine was made with low intervention methods, with grapes that were organically or biodynamically farmed, hand harvested (instead of by machine), fermentation is spontaneous or with native yeast (instead of lab grown yeast), and the wine is made with little or no additives (such as sugar, acid, egg whites, milk, animal gelatin, or a host of chemicals). While sulfites can occur naturally in wine, we seek out wines that add no or minimal additional sulfites, and only when it is added at bottling, at less than 30 ppm.
This means you are actually tasting a living wine that is an honest representation of its terroir (place and time), instead of a wine that is chemically manipulated to taste a certain way. We only carry natural wine, because like so many restaurants that try to source food responsibly and honestly, we believe that it’s only natural that we also embrace honest wine.
