Our History
Cajun Spiced Pickled Quail Eggs was started by my father Doyle Saucier Sr. in 1997, at that time we raised and supplied bobwhite quail and fertile eggs to ship to others across the U.S. We shipped quail and eggs as far as Alaska and Maine. Each week we had over flow eggs in the off seasons when orders was low. My father decided he would try pickling them. After many attempts with friends and neighbors sampling them he came up with the recipe. He put them in convenient stores and sold them from home. After a little while we had to establish a flock that was solely for pickled eggs. After my father passed 2008 we stopped doing the pickled eggs and in 2010 sold out of the quail business. After over 10 years of being out of it I decided to go back into quail farming producing meat birds and putting my fathers pickled quail eggs recipe back in use.
