English - This one is obvious. Short stories, papers, arguments, plays, poems, etc.
Math - This might be a challenge. Talk to your math teacher to see if they have any suggestions.
Science - You can use the tools Nanowrimo provides to write up science fair papers, research documents, even scientist biographies.
Social Studies - It's easy to imagine reports and personal history projects where a lot of writing is needed.
Art - Frequently you need to write about famous artists, maybe you need to create an artist statement about your own art work, or compose a document about your creative process or techniques.
