If you are not aware of how these websites work, a simplistic explanation is that the booking platforms "buy" rooms from the accommodation venues they have an arrangement with at a discounted rate which they then sell online at a profit. This is also why websites often have rooms available where the venue itself does not.
If the platform can't sell a room, it either on-sells the room(s) to another website or sells it back to the venue which is why a venue occasionally will suddenly have last second bookings available.
Note:
Before you book on a website platform, it is often worth checking with the accommodation venue first. If they do still have unsold rooms available they may be willing to price-match (or even better) the booking website price in order to avoid paying the booking platform's commission.
