My name is Muhammad Shahir Rafid and I am a Food Engineering graduate from Daffodil International University with a Bachelor of Science Degree in Nutrition and Food Engineering with CGPA 3.81/4.00. My professional and academic interest is food engineering research, food safety, quality assurance and sustainable product development for fulfilling fully funded post-graduate scholarships abroad based on research.
I worked as a Teaching Assistant under the Department Head of Nutrition and Food Engineering at Daffodil International University, where I supported academic activities, laboratory sessions, student guidance, and research-related tasks.
I also completed a Quality Control and Research Internship at PRAN-RFL Group, where I gained practical experience in production monitoring, quality control procedures, food safety practices, and research-based product development.
I'm an experienced researcher, having worked on hands-on projects and lab work. While working as a Research Assistant at the Bangladesh Council of Scientific and Industrial Research (BCSIR), I worked with studies related to Food Safety, Functional foods and Quality Evaluation. My current research projects are:
Development and Quality Evaluation of a Probiotic-Enriched Piper chaba (Chui Jhal) Stem Pickle – Probiotics to boost digestive health as a novel functional food.
Investigating the nutritional composition, phytochemicals and antioxidant properties of flower parts of Bombax ceiba L. (petals, stigma-filament, ovary powders) as bioactive compounds and functional food ingredient.
BioSeedrix™ Vegan Energy Biscuits – Formulating an energy biscuit with nutraceutical inspiration using research optimization.
Formulation of a nutritious and functional beverage: Development of Ice Apple Drink – A comprehensive study of sensory characteristics and consumer acceptance of a novel drink formulated to be a nutrient rich functional beverage.
I have also consolidated my professional base, by completing training sessions in the Food Safety Management System (FSMS) in terms of ISO 22000:2018, to implement HACCP process, risk assessment, and food safety compliance, and I have also undergone an internship in the production and quality control field at PRAN, which gave me hands-on experience in the food production industry and process optimization.
It has been a privilege to attend Nutrition Summit Bangladesh 2025, Heart Summit Bangladesh, and the Food Safety Youth Leadership Training by GAIN, as these events broadened my scope and understanding of food systems and evidence-based solutions. I am additionally an alumnus of Aspire Leaders Program 2025, from Harvard University Aspire Institute, with leadership, strategic thinking, and international cooperation talents.
In addition to my research, I actively involve myself in community and organizational activities by serving as Science and Technology Secretary of the Bangladesh Food and Nutrition Organization, International Service Director of Rotaract Club of Daffodil International University and Volunteering Organizer for the upcoming BAPA Food Pro International Expo 2025. Additional exposure to the international market in the form of ComTech Nusantara 2025 (Indonesia) and visits to India and Malaysia have enriched my understanding of the practices and research collaboration in food engineering globally. I have a strong research background, hands-on industrial experience, and leadership experience, and am dedicated to furthering the development of food engineering research, sustainable product development, and food safety innovations. First, I hope to be able to participate in high impact research projects that will contribute to the advancement of the global food system, public health, and sustainable nutrition; in addition, I hope to be able to pursue post-graduate research abroad with a focus on research.

I am committed to advancing food engineering, nutrition research, and food safety to support healthier and more sustainable food systems. My academic background in Nutrition and Food Engineering has helped me develop strong knowledge in food processing, quality control, laboratory analysis, product development, and research methodology.
As an Undergraduate Teaching Assistant under the Department Head of Nutrition and Food Engineering at Daffodil International University, I supported academic activities, laboratory sessions, student guidance, instructional material preparation, and research-related tasks. This experience strengthened my academic communication, laboratory skills, leadership ability, and practical understanding of nutrition and food engineering education.
I also completed a Quality Control and Production Internship at PRAN Industrial Park, Ghorashal, where I gained hands-on experience in production line monitoring, quality control procedures, food safety practices, quality assurance documentation, and industrial food processing. This internship helped me understand how food safety, production efficiency, and quality management are applied in real industrial settings.
My research interests focus on functional foods, bioactive compounds, probiotic-enriched products, innovative food formulation, and sustainable food product development. Through my thesis and research activities, I aim to transform scientific ideas into practical food solutions that can improve human health, reduce food waste, and promote sustainable nutrition.
Beyond academic and laboratory work, I actively participate in leadership, volunteering, workshops, and community-based activities related to nutrition, food safety, youth development, and public health. These experiences have improved my teamwork, communication, problem-solving, and organizational skills.
With a strong foundation in food engineering, quality assurance, research, and sustainable food innovation, my long-term goal is to contribute to food security, public health, and sustainable nutrition through research-driven solutions and responsible food engineering practices.

Advancements in food processing technologies help extend shelf life, reduce post-harvest losses, and improve the stability of nutrient-rich foods. Food fortification—an important contribution of food engineering—enhances the nutritional value of staple foods, addressing micronutrient deficiencies in vulnerable populations. Additionally, improvements in cold chain systems, smart packaging, and quality control protocols enable wider food accessibility and help reduce food waste across supply chains.
Sustainability lies at the core of modern nutrition and food engineering.
