Ingredients:
• I 20 oz pkg tortellini
• 1 c grape tomatoes, halved
• 1/2 of a cucumber, diced
• 1 can olives, sliced
• 5 slices of bacon, chopped
• 1 can of chickpeas
• 1/2 an avocado, cubed
• 1/2 c ranch dressing
• Salt & pepper, to taste
Directions:
1. Cook tortellini. Drain and rinse with cold water. Cook bacon, remove excess oil then crumble into smaller pieces
2. While pasta and bacon are cooking, drain & rinse olives and chickpeas and chop up other ingredients
3. Combine everything into a mixing bowl. Refrigerate for at least an hour then serve
Ingredients:
• 1 onion, diced
• 1 lb ground beef
• 1 packet taco seasoning (opt)
• 2-3 heads of lettuce
• 1 cucumber, halved and sliced
• 2 tomatoes, diced
• 1 can kidney beans
• 1 can corn
• 1 can olives
• 1 cup fiesta blend shredded cheese
• Dressing of choice (we use Catalina, French or Russian dressing)
Directions:
1. Sauté onions and ground beef until cooked through. If using taco seasoning, add now. You can also add kidney beans at this time if you want them warmed up. Set aside to cool
2. Rinse and drain cans and chop other ingredients
3. Combine everything in a bowl and serve with crushed Fritos. Enjoy!
For the Salsa:
1 granny smith apple
1 lb strawberries
2 peaches
1 tomato
2 T fresh mint, minced
2 T balsamic vinegar
2 T honey
2 T brown sugar
1 T lemon juice
For the Chips:
5-6 street taco flour tortillas
1 T oil
1-2 T cinnamon sugar
Directions:
Preheat oven to 350 degrees Fahrenheit. Cut tortillas into six equal triangles and place on a cookie sheet. Toss tortillas in oil then cinnamon sugar mixture. Bake for 12-16 minutes or until golden brown and crispy
Dice the apple, strawberries, peaches, tomato and mint. Put in a large mixing bowl
In a separate bowl, mix the balsamic vinegar, honey, brown sugar and lemon juice. Pour over the fruit and combine
Serve with the cinnamon sugar chips and enjoy!

• 2 T olive oil
• 32 oz of corn (I used canned)
• 6 T mayonnaise
• 3 T lemon juice
• 1 c parmesan (and/or cotija) cheese
• 1 tsp minced garlic
• 1/2 c cilantro
• 1 tsp chili powder
• 2 T jalapeño pepper (opt)
• 4 T red onion (opt)
• Crushed Takis (opt)
• Salt & pepper, to taste
Directions:
1. Heat oil in a pan and add corn. Cook until corn starts to char (8-10 mins)
2. Add all other ingredients in a separate bowl and mix until combined
3. Once corn is finished, incorporate it into the mixture
4. Top with more cheese, chili powder, cilantro or Takis and serve immediately
