For me, humba is more than just a dish—it’s a portal to a time and place where joy was found in the simplest moments and where gatherings were full of laughter, music, and the smell of slow-cooked goodness wafting through the air. Growing up, every fiesta in my hometown was not complete without my uncle's humba gracing the table. Its tender, savory-sweet flavor was a highlight that always brought our family together.
Life, however, had a way of taking me far from home. As the years went by, I found myself living away for a long time, missing not just the familiar faces and sounds of my hometown, but also the flavors that defined my childhood. Whenever fiesta season came around, I would find myself longing for a taste of my uncle's humba. It wasn’t just the dish itself I missed, but the feeling it evoked—the warmth of home and the sense of belonging.
Driven by nostalgia, I decided to recreate that beloved humba from memory. I pictured every step, every ingredient, and every flavor as if I were back in my uncle's kitchen. It was a labor of love, filled with trial and error as I sought to bring those memories to life on my plate. When I finally succeeded, it was as if I had found a piece of my past—comforting, familiar, and oh so delicious.
Soon, my version of humba became a staple at every gathering in my home in Imus. My friends would eagerly anticipate it at every party, calling it the highlight of our feasts. It wasn’t a celebration without humba, they would say, and slowly it became a dish that carried not just my own memories, but the joy of those who came to love it. It was through their encouragement, after countless gatherings where they praised my cooking, that the seed was planted. "Why not open a food business?" they suggested. "You’re so good at this; you should share it with more people."
The thought lingered in my mind, and it wasn’t long before I realized that my passion for cooking was more than just a hobby—it was a calling.
