Maple syrup starts with sap. It takes around 40 gallons of sap to make just one gallon of syrup! Collecting sap is a lot of work. We need to go to every tree and unload the buckets of sap into five gallon pails which we then take to a large crate on a tractor. It later gets taken back to the sugar shack, filtered, and boiled. We had around 250 buckets to empty just about every day this year!
Boiling the sap takes quite a long time. During this process all the water is taken out of the sap and we are left with the sticky sweet substance we know as maple syrup.
Pouring and Packaging
During this step we draw off the syrup and package it. Drawing off is simply taking the ready syrup out of the arch through a small spout on the side. After this step we bottle our syrup and place the bottles upside down to seal them.
