コク研究会のご紹介

コク研究会の沿革

  おいしい食べ物を口に入れたときに、そのおいしさを表現する言葉として「コク」がよく使われます。「コク」は多くの食べ物に使われていますが、それぞれの食品の「コク」がどのような味わいを指しているかと聞かれたときに、具体的にそれを説明できない場合が多いと考えられます。これは「コク」に対する正確な定義がないことが１つの理由です。

そこで、2011年から、食品の「コク」の定義を明確にすることや食べ物の「コク」がどのように形成されるかについて有識者によるシンポジウムを開催し、論議を深めてきました（シンポジウム概要：別紙参照）。また、2015年からは、産学の有識者によるコクの懇談会を設立し、「コク」に関する論議を行ってきました。コクをもたらす味わいやそれに寄与する要素は、食べ物の種類によって異なります。これまでの論議を基礎として、コクに興味を持っておられる多くの方とコクに関する議論を深めるために、2017年にコク研究会を設立いたしました。

本研究会は、食品のおいしさに関わる「コク」に関する科学的研究についての発表、情報の交換、啓発活動を行うことにより、我が国ならびに海外における学術の発展に寄与することを目的としています。本研究会の趣旨をご理解いただき、多くの方がご参加くださいますよう、心からお願い申し上げます。 （コク研究会設立趣旨書より）

History

In Japan, we often use the word "koku" when we eat delicious foods. However, it has been difficult for many people to answer the question "what is koku?". The reason is because the definition of koku has not been clarified. 

From the year 2011, to clarify the definition of  koku, we have organized the scientific symposium on koku. In 2015, we continued to discuss on koku at the "Koku Round Table". In 2017, "The Society on Research on Koku Perception" was established, and the scientific symposium has been held annually. 

The aim of the society is to contribute on the development of the study on koku. I sincerely hope that many people understand the aim of the society and attend to the activity held by our society.
