Business Problem: Restaurant chain Maple & Main has an increase of reported foodborne illness from customers within 24 hours of eating at the restaurant.
Business Goal: Reduce the number of reported foodborne illness cases by 80% within three months of implementing the food handling training program by ensuring 100% of kitchen staff complete the training and pass a final assessment with a minimum score of 80%.
Audience: This training is intended for all kitchen staff involved in food preparation, including line cooks, prep cooks, and supervisory personnel. The majority of participants (approximately 65%) are aged 17–24 with limited work experience in food service. Many are in their first job or have less than one year of kitchen experience. About 15% of learners are experienced cooks with several years in the industry, and 20% hold supervisory or management roles, such as shift leads or kitchen managers. These individuals may already be familiar with food safety procedures but will benefit from standardized training and updates on current best practices in order to ensure policies and procedures are followed by all kitchen staff.
Process: The development process for this Articulate Storyline project followed a structured instructional design approach using the ADDIE model. The process began with identifying the target audience, defining the business problem, and establishing the learning goals in a detailed design document. Building on this foundation, a comprehensive storyboard was created to define the visual design and plan interactive elements. Finally, the course was developed in Articulate Storyline using an iterative process, incorporating multiple rounds of review, feedback, and refinement to ensure optimal functionality, interactivity, and an engaging learner experience.
Evaluation: Evaluation of the course’s effectiveness incorporated Kirkpatrick’s Level 2 (Learning) to measure knowledge and skill acquisition through interactive assessments, and Level 3 (Behavior) to assess on-the-job application through follow-up surveys and performance metrics.
