Title: Organized Food Drive for Flagstaff Family Food Center (16,000 lbs of food collected)
Background: The Flagstaff Family Food Center is a nonprofit organization in Flagstaff, AZ that provides meals for anyone needing a hand up. Volunteering is one of the opportunities to help out the community. The food goes to the creation of meals, some 500+ per day, as well as, food boxes distributed as needed. I was responsible for the Safeway site location where we collected nearly a quarter of the total for the weekend.
What I learned: This community organization has taught me how great the need is in our community and in communities across the country for nutrition education and volunteering. Additionally, it showed me how I could make a difference and how we all can just by giving of our time and resources if we have them to give. Food insecurity is a real thing and with the help of everyone we can impact this crisis in a huge way. What is most rewarding about volunteering with an organization such as the Flagstaff Family Food Center is coming together with people and for people. Its such a beautiful way to learn together while giving, feeding, and supporting.
Assignment Title: Create a Recipe which incorporates a Nutritionally Balanced Entree' and Desert
Course: NTS-250 Food is Medicine
Background: This course was designed to teach students the importance of relying on good nutrition as opposed to processed foods, medications, and any thing harmful to our bodies from a nutrition standpoint. Healthy eating is powerful and a way to prevent, treat ,and sometimes reverse the effects of certain diseases and illnesses. To gain this knowledge was invaluable to me, considering the avenue I want to go in after graduation. Registered dietitians have specific nutrition education requirements, whereas doctors and nurses only touch the surface of nutrition during their education and the focus is overall health and not as specific or impactful as the food we eat.
What I learned: Food really is medicine! Imbalances and root causes can be reversed and even prevented based on what we eat and how we combine nutrients, minerals and vitamins. Food based solutions for maintaining health and avoiding and preventing chronic illness is irreplaceable. The knowledge learned in this class gave me the tools to help myself and influence others. I am very passionate about the subject of nutrition and now feel I can help others live a healthy lifestyle too.
