Ingredients:
150g Light Cream Cheese
400g 0% fat Greek Yoghurt
1 Egg
1 Tsp Vanilla Extract
15g Stevia or your choice of sweetener
40g Protein Powder (vanilla, or your choice)
200g Frozen Blueberries or fresh
10g Cornflour Mixed With Water
Preparation:
In a blender, combine cream cheese, greek yogurt, egg, vanilla extract, stevia, and protein powder. Blend.
Pour mixture into a lined baking dish, add blueberries
Bake at 390 degrees F for 25-30min
Set in fridge for 1 hr to set
In a stovetop pan, add blueberries, and cornflour water mixture and mix on low heat until thickened.
Store in the fridge for half hour
Top cheesecake with blueberry topping, slice into 6 pieces, and enjoy!
