Marrakesh Carrots

Françoise, Ethan and I all really loved this delicious, hearty salad from Sara Forte's Sprouted Kitchen: Bowl + Spoon. (Françoise especially appreciated it as she just arrived back from a long trip and was craving something healthy and fresh.) Rather than sprinkling some feta on top of the salad, I mixed a fair amount into the salad. I sprinkled a bunch of pomegranate seeds on top of each serving, which adds great colour and flavour.
