We are a team of researchers with a diverse background with a passion to provide high food safety standards for people with food hypersensitivities.

Dr Tassos Koidis

Tassos leads the food science research line at Queen’s University Belfast. In the interface of social and food science, Tassos coordinated two projects aimed at understanding the behaviour and practices of consumers while storing chilled food “domestic fridges on the island of Ireland - temperature control, design and consumer practices”, 2014) and, hypersensitive consumers, when procuring pre-packed food (“Food security for the food sensitive consumer on the island of Ireland”, 2015) resulting in new knowledge in the field. More broadly, Tassos’ research tries to understand how the analytical signals produced from various chemical parameters of different foods informs us about their nature and their properties.

Hazel Gowland

Dr Hazel Gowland has had a peanut and nut allergy since childhood and works to understand and improve the lives of people with allergies and related conditions. She also helps food businesses improve their allergen management, provides training, and lectures on university allergy and nutrition programmes.

Michael Walker

Michael Walker is an honorary professor in the Institute for Global Food Security in Queen’s University with a long standing research interest in food allergy. Michael is a member of the European Academy of Allergy & Clinical Immunology and co-chair of the ILSI-Europe expert group on allergen quantitative risk assessment.

Theano Stoikidou

Theano is a recent MSc Leadership for Sustainable Development graduate with a background in Chemistry and Food Science. She is enthusiastic about research projects on improving sustainability as well as the safety of food systems. With experience within a series of research projects in these fields, she is monitoring the day-to-day tasks of this project.
