In the video The 50/50 Rule of Visual Note-Taking, Doug Neill explains that sketchnoting is 50% about the current skill set that you have and 50% about constraints that you place for yourself, prior to starting.
Pre-determining how a sketchnote will be set up can be a real time saver, eliminating some decision making during the process. You may even think about making those decisions on a post-it note as a quick guide and reminder to yourself.
