Whether you're counting down to your next Royal Caribbean cruise or dealing with a serious case of post-cruise blues, here's a Ranger Cookie recipe you can try at home.
1 cup shortening or softened butter
1 cup light brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
2 cups crispy rice cereal, such as Rice Krispies, or corn flakes
1 cup old-fashioned oats
1 cup shredded coconut or coconut flakes
1 cup chocolate chips
1. Preheat the oven.
Preheat your oven to 350°F.
2. Mix the dry ingredients.
In a bowl, stir together the flour, baking soda, and baking powder. Set aside.
3. Start the cookie dough.
In a large mixing bowl, combine the softened butter or shortening, brown sugar, granulated sugar, vanilla extract, and salt.
4. Cream the mixture.
Using a stand mixer or hand mixer, beat until the butter and sugars are creamy and well combined.
5. Add the eggs.
Beat in the eggs until completely incorporated.
6. Add the flour mixture.
Gradually add the dry ingredients to the butter mixture. Mix just until combined. Don't overmix.
7. Add all the good stuff!
Add the crispy rice cereal, oats, and shredded coconut. Use a silicone spatula to gently fold everything into the dough.
8. Bring on the chocolate.
Fold in the chocolate chips.
Don't panic if the dough looks dry and crumbly. That's normal for this style of Ranger Cookie.
If it seems too dry to hold together, add approximately ¼ to ½ cup additional softened butter or shortening, a little at a time, until you reach a scoopable consistency.
You can bake the cookies immediately, or refrigerate the dough for about 30 minutes if it feels too soft to work with.
9. Scoop and bake.
Use a medium cookie scoop to portion the dough onto a parchment-lined or silicone-lined baking sheet, leaving room between each cookie.
Bake at 350°F until the edges are lightly golden and the centers are set. Because ovens and cookie sizes vary, start checking them around the 10-minute mark.
Allow them to cool briefly on the baking sheet before transferring them to a cooling rack.
