After thinking about things for a bit and doing some out of town shopping, I've made my decision...
1. I'm going to start by making a few Christmas cards using both copper tape and conductive paint. This will give me a visual understanding of how paper circuits really work. This is kind of my easy, beginning project.
2. A bit more challenging but still beginner practice level - I will create a journal that uses conductive paint and an LED. I plan to make the connecting "switch" out of elastic.
3. Next challenge - I will make a paper house that lights up when it gets dark. I will follow a template for this idea. This uses some of the things I used in the Arduino unit... a transistor, a resistor, LEDs, and a photoresistor.
4. Final challenge - still working out the details. But I would like to turn my canvas into some sort of proximity sensor that turns on LEDs and makes noise. Although I'm really not quite sure yet how this will work.
