Essential Ingredients
Salsa taquera (the red salsa you usually get at taco trucks)
Corn tortillas (they've really gotta be corn)
Oil
Vinegar
Optional ingredients
Eggs
Avocado
Lime
Cilantro
Pineapple
Radish
A serrano pepper so you can remember all the times Ernie overestimated your spice tolerance.
Combine the salsa and vinegar (should taste ~equally saucy and vinegary). This is our sauce, and it tastes shockingly similar to the sauce on Ernie's chilaquiles.
Heat oil in a pan over high heat, then throw in some tortillas (at least two, more if you're even a little hungry).
Once they're a little bit crispy on both sides, pour the sauce over them. Let them soak it up, then cook it onto one side of the tortillas, then fold it up and add more until I the tortillas are in quarters and they've mopped up all the sauce from the pan.
Put them in your bowl and add salt
Next fry some eggs however you like them (I cook mine over medium high heat in a covered pan until the yolk fogs over but is still runny), and put them on top of your tortillas. Salt them too.
Avocado wedges, etc., can go on the side. Tear some cilantro in if you've got it. I like eating it with strong, acidic coffee.
