Made for the Feb work trip & pizza party, not too tart.
Ingredients (makes 1 pie)
4 extra large eggs (I used 4 large by mistake)
1 14 oz can sweetened condensed milk
3/4 c Key lime juice, takes 6-7 Key limes (I used 4 regular limes)
1 store bought Keebler graham cracker crust
1 c whipping cream
3/4 c sugar
Preheat oven to 325 F
Separate the eggs, put the yolks in a medium bowl. (The whites aren't used in this simple recipe, eat or freeze them.)
Add condensed milk to egg yolks, beating for 5 minutes on medium speed.
Juice the limes keeping as much pulp as possible.
Drizzle in the lime juice with the beaters running, and continue beating for 2 more minutes, then quickly pour the filling in to the graham cracker crust.
Bake on center rack for about 22 min. or until center is firm when shaken slightly. DO not open oven while the pie is baking. If the pie is still loose after 22 min, bake for another 3-5 min.
Clean and dry the beaters while the pie is baking.
Beat the whipping cream On medium speed, until light and frothy.
Add sugar to the cream, 2 T at a time, beating the whole time. Refrigerate until the pie has cooled.
Gently spread the whipped cream over the top of the pie and refrigerate till ready to serve.
