Ingredients:
- Bell peppers
- Tin foil
- Baking pan
Directions:
- Preheat oven to 400 degC.
- Line baking pan with tin foil (no need to spray). Place bell peppers on foil on their sides.
- Once oven is preheated, place bell peppers into oven for 20 min.
- Flip bell peppers over, and roast for another 20 min. The peppers are done roasting when the skin is slightly charred and blistering (see photo of before and after).
- Remove bell peppers from oven and allow to cool.
- Once cool enough to handle without burning yourself, peel away the skin (compost skin, if able).
- Slice roasted peppers, removing stem and seeds.
- Can be stored in fridge or flash frozen. Enjoy!
