Our Story 💡

I would like to share with you, the story and inspiration of Betsita's sauces. I remember the first chilli sauce I made back home, was the salsa jalapeña, I enhanced it by following my grandma's cooking tips. I started to make that sauce for almost every family reunion.
I understood the importance of sauce since I was very little, as my father would always sat at the table asking for more sauce, and if there wasn't any, he would always say: Adonde esta la salsita? (where is the little sauce?)
When I moved to Wellington with my husband, I had to call my mom, so that she could send me her tomato salsita recipe asap! because I couldn't find anything like that.
I love to fusion elements of different culinary traditions, and my husband enjoys creating the hottest hot sauces with an ample amount of fresh NZ grown chilli peppers (ghost, magma, trinidad moruga, rocoto and others), with beautiful zesty and citrus spices, making the perfect layering of flavour and heat.
So we decided to start creating sauces combining Tropical, Caribbean, Indigenous and Spanish flavours.
Our mission is to produce the best tasting sauces, for you to have an easy way to lift your meals up.
Studying culinary arts helped me learn more about food quality assurance and safety. All of our products are handcrafted in Wellington, with the freshest produce, best quality New Zealand ingredients and made with care.

New Zealand Cray Fish Rolls

Don’t go cray cray anymore, and check this easy recipe, with Betsita’s Caribbean Magma and New Zealand Crayfish.
Ingredients
  • 350 grams of crayfish tails (around 2 big tails)
  • 2 tbsp of butter (too cook the crayfish)
  • 1 tbsp of butter to brush on the buns
  • 2 baby italian rolls or 2 hot dog style buns
Dressing
  • 1 tsp of Betsita’s Caribbean Magma
  • ½ cup of celery
  • ¼ cup of good quality mayo
  • ½ tsp lemon zest
  • 1 tbsp of lemon juice
  • 1 tbsp of chives
  • Salt and white pepper to taste

Method Steam the crayfish for around 6 minutes, or until it starts turning red (don’t worry, it’s ok if it’s a little undercooked, we’ll cook it more in the butter).De-shell the tails, cut the crayfish to your liking (I cut it around 2cm by 2cm).Heat the butter and paprika in a pan, cook the crayfish gently, for no more than 90 seconds. Let it cool down, and mix it with the dressing, add salt and pepper to tasteBrush the buns with melted butter and grill them on a pan until they turn a bit golden. I used baby italian bread, because I personally prefer it, over hot dog buns, and I cut the edges a bit, to brush the butter, before grilling them. Garnish with chives.

Prawn Ceviche

Serves 4
Ingredients
  • Betsita’s Caribbean magma
  • 400g to 800g of prawns
  • 2 diced tomatoes
  • ½ small red onion (thinly sliced)
  • 1 bunch of cilantro (ideally cilantro, but this time I couldn’t find a good one, so had to use a homegrown Cuban oregano instead)
  • 8 lemons squeezed (you can use less, if this is too citrusy for you)
  • 2 large avocados cut into small cubes
  • 1 diced yellow capsicum
  • 1 tbsp of extra virgin olive oil (optional)
  • Salt and pepper to taste

MethodBlanche the prawns in boiling water for about 1 to 2 minutes (depending on the size of the prawns) or until they start turning orange, then shock them in cold water and strain when cooled.Add the lemon juice and marinate for 30 mins to 1 hour.Add the rest of the ingredients and marinate for 30 mins more (for a quick recipe, no need to marinate more, unless you'd like to enhance a more citrus flavour in all ingredients).Add salt and pepper to taste.Add Betsita’s Caribbean Magma, to your taste.
