I remotely control my mini PC, PC Stick and Raspberry Pi4 via VNC. Once it is set up I never had any issues and it uses so little resources that I leave it running in the back regardless if it's in use or not.

If your "server" is Windows, Remote Desktop will always be the better performer. RDP is a native Windows service, and its remote connection method is far less bandwidth intensive than VNC or other methods. VNC is typically more CPU intensive as well. Are you sure the poor performance you see is CPU related, or could it be network related?

It's not popular here but frankly, for 200 dollars you can buy a very nice (refurbished) computer with and i5 chip and just put it at the foot of the mount or on the spreader and have basically unlimited resources at your disposal. I set up each night running Anydesk with two monitors, CCD Inspector interactively, the SKYX and transmitting my images from the remote observatory to the cloud using a google drive. If I decide to do something else on the computer - delete some old files, download a new driver etc, I have plenty of CPU/Memory to run it. I used a stick for a while and I just didn't like the limitations that it imposed on what I wanted to do with the system.

Edit: On a related topic, does anyone know of a remote desktop solution for a Windows client to connect to a headless Linux host that supports remote audio? I'm currently using xrdp on the Linux machine. It works great for everything except audio. I've used VNC in the past, and it doesn't support audio either.
