The Absolute Most Delicious Greek Beef, Potato, and Green Bean Stew
You’ll Ever Eat in Your Life!!!
Ingredients:
2 pounds beef stew meat (can substitute chicken—if using chicken I like to use chicken with
the bone in)
3 Tablespoons of oil (I use a mix of 2 Tablespoons of Grapeseed oil and one Tablespoon of Extra Virgin Olive Oil)
2-3 onions chopped fine (see video to watch how I chop the onions!)
1 medium saucepan filled 3/4 full with filtered water
5 Russet potatoes cut into about 4 pieces each (see video)
1 28oz can crushed tomato with basil
2-3 fresh sprigs of basil (optional)
2-3 cups fresh green beans
1 tsp-1/2 Tablespoon salt
1/4 tsp pepper
Cooking Directions:
Cover the bottom of a large stockpot with oil. Heat oil on medium heat until warm as shown in video. When oil is warm, add chopped onions to stockpot. Stir onions periodically until they are transparent (about 10 minutes). Do not let onions burn or stick to bottom of pot.
Put 1 medium saucepan filled 3/4 full with filtered water over medium heat to become warm.
After onions are transparent add meat to stockpot. Can increase heat to medium high (a 5 or a 6) Brown meat stirring occasionally (see video—about 10 minutes). After meat is no longer pink add enough water from saucepan to just cover the meat and onions. Tilt lid on stockpot and allow meat and onions to simmer. Stir occasionally, and make sure meat and onions do not burn or stick to bottom of stockpot . Simmer until meat can be pierced easily with a fork (see video)…about 40 minutes. May need to lower heat to low medium (about a 4 or 5) as meat simmers and becomes tender.
After meat is fork tender add 28oz can of crushed tomatoes with basil. Can also add a few sprigs of fresh basil if you have that available. Add Russet potatoes and simmer about 10 minutes stirring the pot occasionally (see video to understand how I stir the soup after adding the potatoes!!) After about 10 minutes add the green beans to the soup. Also add the salt and pepper. Simmer an additional 10 minutes or until the green beans and potatoes are completely fork tender.
