While visiting my mother over the New Year's holiday I decided to make a video about Greek Vasilopita or Greek New Year's Bread!!! I am happy to announce that I have just uploaded this video, and this is the first video I have made with my mother!!! My mother's Greek Vasilopita is very unique because it contains a Greek spice called Mastic gum which is a resin from an evergreen tree that grows on only one island in the entire world, the Greek island of Chios!!! The spice has been traditionally used to treat a wide variety of digestive problems including acid reflux disease, inflammatory bowel disease, and peptic ulcer disease. The spice has an incredible and unique smell and is what gives this bread its amazing taste!!! I'm sure that baking this bread will become your favorite way of celebrating the new year!!! My entire family loves this bread including my children!!!

Watch this video to find out how to make authentic Greek Spanakopita in a bread dough!!! This is not the typical Spanakopita in a phyllo dough that is mass produced and found in stores and restaurants as well as in most Youtube videos about Spanakopita. Spanakopita in a bread dough is the kind of Spanakopita many people all over the country of Greece traditionally make in their homes for their families to enjoy! It is easier to take on the go than Spanakopita in a phyllo dough and is very easy to freeze as well. Though making Spanakopita in a bread dough can be a longer process than making Spanakopita in a phyllo dough, I have provided many time saving tips both in my video and in on my recipe website (see link below); I have also written out the recipe for making half the amount of Spanakopita shown in the video on my written recipe website for those who have less time on their hands. Please do not let time deter you from making this kind of Spanakopita!!! Try it! You will be happy you did!!!

Madeline and Margaret were both kind enough to taste my mother’s Spanakopita, and both of them have said that my mother’s Spanakopita is the best Spanakopita they have ever eaten in their lives!!! Pam has helped me by taste testing the recipe on several occasions to help me figure out the best ratio of dill to onions in the recipe! Lori liked the picture I posted on Facebook of my mom’s Spanakopita so much that she decided to try making Spanakopita herself! She made a very tasty looking Spanakopita in a phyllo dough!!! These four friends have inspired me to share this recipe with others both in written form and in the form of a video!!!
