Setting for 4
Chop the potatoes, carrots, and celery. When you are chopping the potatoes put them water so they don't brown ( it just makes it look better).
Put the potatoes and carrots in a pot of water and set to boil you don't want to put the celery in at the same time or it will be soft.
Once the potatoes are almost done ( about 2 to 3 mins.) you can put the celery in. When all cooked drain the water out to about 1/3 of the pot has water. Pour Half & Half till potatoes are covered.
Mix the Corn, Herbes de providence, and butter in the pot. Put the heat on low to low medium.
When hot serve=) To Make it Heart healthy you could use milk or 2% milk and you could cut the butter down as well.
