Eating animals is very nutritious for beegs — so much that maybe it is a good idea to become a rancher instead of a farmer for the early game — Bigger animals have larger values, and keeping a healthy herd is even more nutrituous.
Furthermore, some animals are more fun to eat for the foodie aspect of it. Snow Golems are basically snowcones, they are so tasty they will give you lasting regeneration ❄️🍧✨, and spiders heal a little health with every bite (ew tho! spiders!? — because of the protein content! — still eww!).
Mobs that are eaten this way will drop no edible items. In fact, part of the food restored by eating animals is from automatically consuming their food drops.
Food restored by eating animals is not nerfed as much by the separate system "Beegs are Hungry" that nerfs normal food values — so that beegs need to eat STACKS of steak to replenish their hunger bar.
Different animals and monsters have surprise effects when eaten, this is the list of them:
Healthy animals in more filling
Skeletons and Golems have no nutritional value
Illagers and witches grant various random effects
Glow Squids grant night vision
Magma Cubes and Blazes grant fire resistance, but hurt to eat
Slimes grant regeneration
Spiders heal health
Endermen and Horses grant strength
Ghasts and Pandas grant resistance
Guardians grant haste, Elder Guardians grant a much more potent effect.
Mushroom Cows and Parrots grant luck
Iron Golems grant slowness
Snow Golems grant regeneration, and sometimes speed or jump boost
Various fishes such as cod or salmon grant speed
Pigs and Chicken grant are rich for saturation
Players give bonus saturation
Cows and Goats are highly nutritious
The Wither Boss gives you Health Boost and Fire Resistance
The Warden gives you... pain, but also Absorbtion
The duration and frequency of these bonus effects can be balanced if you care about that stuff (I dont!). This can be disabled in the Server Config:

The frequency is the chance of getting it, similar to eating raw chicken that only gives hunger sometimes, the frequency multiplier is just how often you get these effects:
