After 5 years from the last edition, the 5th International Conference on Fresh-Cut Produce: Maintaining Quality and Safety, will be held in Foggia (Italy) from 3 to 6 June, 2024 under the aegis of the International Society for Horticultural Science (ISHS) . In the last 20 years, we, at the University of Foggia, have been among the most active groups in R&D, industry training and networking related to fresh-cut products, directly involved in national and international projects, short-courses, and other scientific events. This conference will be the occasion to bring together the scientific community and the industry for sharing the latest results on this area.  Advanced techniques to prevent browning; molecular tools for understanding physiological response to damage and post-cutting behavior; innovative technologies to extend shelf-life of cut products; modified atmosphere advance and packaging solutions; sustainable solutions for fresh-cut processing; consumer acceptance and perception, and product safety will be some of the main topics of the conference.
