Polyphenols contribute to human health benefits, although the responsible mechanisms are not clear. Experimental studies indicate that they could interact with certain enzymes. By combining molecular modeling, atomistic simulations, and free energy calculations (MM-GBSA), the molecular interactions of polyphenols with key metabolic enzymes (lipases, α-amylases, α-glucosidases, AMPK) will be characterized.
