What you'll need: microwave, 1 microwave safe bowl, 2 other microwave safe dish (bowl, mug, plate, etc), fork or spoon, larger bowl/container
Wash 1 cup of quinoa in the sink until the water is clear and place in a microwave safe bowl
Add ½ the packet of taco seasoning to the quinoa and stir
In a mug or microwave safe bowl, boil 2 cups of water
Add the two cups of water to the bowl with the quinoa and stir
Cover the bowl with a microwave safe bowl or mug and microwave the quinoa on high for 5 minutes
Microwave the quinoa for 4-5 minutes, taking out and stirring every 2 minutes until the water is almost completely absorbed
Add quinoa to a larger bowl/container
Add garbanzo beans and vegetables to the microwave safe bowl and microwave for 1 minute (optional)
Combine garbonzo beans, vegetables, and black beans with quinoa in large bowl
Add qreek yogurt, second half of the seasoning packet, and cabbage (can substitute for spinach or lettuce)
Stir and serve
