BACKGROUND
Cheese brining is an important step in cheesemaking, and it involves the outward migration of water along with the simultaneous uptake of salt by an inward mass transfer process. It is one of the most fundamental examples of the mass transfer process widely taught in food processing/engineering courses across the globe. Therefore, we put forth a computer-based Multiphysics cheese brining App, which can provide students with a spatial and temporal understanding of the simultaneous mass transfer of water and salt within cylindrical cheese samples.
