BACKGROUND
Drying is one of the most fundamental yet complex unit operations widely taught in food processing/ engineering courses across the globe. Technically, fruit and vegetable drying involves simultaneous heat and mass transfer, resulting in significant physical deformation. However, due to separate mathematical concepts for each of the transport processes, it becomes challenging to integrate all three theoretical aspects together for an enhanced classroom learning experience. Therefore, we put forth a computer-based Multiphysics drying App, which can provide students with a spatial and temporal understanding of simultaneous heat and mass transfer along with structural changes in the product.
