Italian Frittata

Ingredients:
¼ cup diced salami
¼ cup artichoke hearts, drained and chopped
¼ cup chopped cherry tomatoes
½ (2.25 oz) can sliced mushrooms, drained
3 eggs
⅙ cup milk
1 green onions, chopped
½ clove garlic, minced
½ teaspoon dried basil
½ teaspoon onion powder
½ teaspoon salt
ground black pepper to taste
⅙ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
Directions:
1. Preheat the oven to 425 degrees F (220 degrees C). Grease a shallow 2-quart baking dish.
2. Heat a skillet over medium heat; cook and stir salami, artichokes, tomatoes, and mushrooms until heated through, about 4 minutes. Transfer salami mixture to a baking dish.
3. Whisk eggs, milk, green onions, garlic, basil, onion powder, salt, and black pepper in a large bowl; pour eggs over salami mixture.
4. Sprinkle it with mozzarella cheese and Parmesan cheese. Bake until eggs are set and cheese is melted, about 20 minutes.
When my family has a ton of leftovers and has no clue what to do with them we make frittatas. Instead of wasting all of this food and throwing it out we create different combinations of foods that we think will taste good together. This relates back to when life gives you lemons because sometimes instead of having the food to cook a whole new meal, you need to use your imagination and creativity to create a dish with the ingredients that you already have access to.
