Ingredients
For the ramen:
● 2 packages ramen noodles, seasoning packets removed
● 4 cups chicken broth
● 1 chicken breast
● 1 tablespoon vegetable oil
● 2 cloves garlic, minced
● 1 teaspoon fresh ginger, grated
● 2 tablespoons soy sauce
● 1 teaspoon sesame oil
For the toppings:
● 2 eggs
● 2 green onions, sliced
● 1⁄2 cup corn
● 1 sheet nori (seaweed), cut into pieces
● Sesame seeds, optional
Directions
1. Heat the vegetable oil in a pan over medium heat.
2. Season the chicken lightly with salt and pepper and cook for about 5–7 minutes on each
side, or until completely cooked. Set it aside to rest before slicing.
3. Bring a small pot of water to a boil. Carefully add the eggs and boil for about 7 minutes
for a slightly soft center.
4. Transfer the eggs to cold water. Once cooled, peel them and cut them in half.
5. In a large pot, add the chicken broth, garlic, ginger, soy sauce, and sesame oil.
6. Bring the broth to a gentle boil, then reduce the heat and simmer for about 5 minutes.
7. Add the ramen noodles and cook according to the package directions, usually about 3
minutes.
8. Divide the noodles and broth between bowls.
9. Slice the cooked chicken and place it on top of the noodles.
10. Add the egg halves, corn, green onions, and nori.
11. Sprinkle sesame seeds on top if desired and serve the ramen while it is hot.
