Buffalo chicken is one of those foods I can never get tired of. I love the mix of crispy chicken, spicy buffalo sauce, cool ranch, and crunchy pickles.
For this week's challenge, I wanted to create an American-style lunch that also felt personal to me. I decided on a crispy buffalo chicken sandwich because buffalo chicken is one of my favorite foods and it originated in Buffalo, New York.
I made the lunch my own by adding some of my favorite sides, including chips, carrots and celery with ranch, fruit, dark chocolate, and a Diet Coke.
While looking for ideas, I found the RedHot Buffalo Chicken Sandwich recipe from McCormick for Chefs. I used this recipe as inspiration but changed a few things to make the sandwich more my style.
I used panko breadcrumbs to make the chicken extra crispy. I also added ranch, lettuce, pickles, and a toasted brioche bun.
Crispy Buffalo Chicken Sandwich Recipe
1 boneless, skinless chicken breast
½ cup all-purpose flour
1 egg
½ cup panko breadcrumbs
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon salt
¼ teaspoon black pepper
Cooking oil
¼ cup Frank's RedHot Original Cayenne Pepper Sauce
2 tablespoons melted butter
1 brioche bun
2 tablespoons ranch dressing
Shredded lettuce
3–4 dill pickle slices
1 tablespoon butter
Pound the chicken breast until it is an even thickness.
Season the chicken with salt, pepper, garlic powder, and paprika.
Put the flour, beaten egg, and panko breadcrumbs into three separate bowls.
Coat the chicken in flour, then egg, and finally the panko breadcrumbs.
Heat a thin layer of oil in a skillet over medium heat.
Cook the chicken until golden and crispy on both sides and it reaches 165°F inside.
Mix the hot sauce and melted butter together to make the buffalo sauce.
Toss the cooked chicken in the buffalo sauce until fully coated.
Butter and toast the brioche bun until golden.
Spread ranch on the bottom bun and add lettuce and pickles.
Place the buffalo chicken on top and add extra ranch or buffalo sauce if desired.
Close the sandwich, cut it in half, and serve.
