These apple crisp cookies taste like apple pie in cookie form! Perfect on a cozy fall day or when you just need a sweet treat. These cookies pair oatmeal cookies with caramelized apples and a simple sugar glaze — a recipe from Liv for Cake.

Ingredients
Apples:
2 cups granny smith apples-peeled and diced
2 tsp butter
4 tsp light brown sugar-packed
Cookies:
1 ½ cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
½ tsp salt
1 cup butter at room temperature
1 cup light brown sugar-packed
¼ cup granulated sugar
2 large eggs
2 tsp vanilla extract
3 cups rolled oats/old-fashioned oats
Glaze:
1 cup powdered sugar
1 tbsp water
Instructions:
Apples
Place 2 cups diced apples, 2 tsp butter, and 4 tsp light brown sugar into a medium frying pan. Cook over medium heat, stirring occasionally until golden. Spread apples over a paper towel to cool.
Cookie dough
In a medium bowl, whisk 1 ½ cups flour, 1 tsp cinnamon, 1 tsp baking soda, and ½ tsp salt. Set aside.
In a large bowl with an electric mixer, beat 1 cup butter, ¼ cup granulated sugar, and 1 cup light brown sugar on medium-high speed until fluffy.
Add eggs one at a time into the large bowl and beat each egg on high speed until each egg is fully incorporated. Add 2 tsp of vanilla extract after the eggs have been added.
Turn speed to low and slowly add flour mixture until combined. Then add 3 cups of rolled oats.
Fold in caramelized apples and mix until combined.
Chill dough in the fridge for at least 1 hour
Preheat the oven to 350 F and line a baking tray with parchment paper.
Scoop cookies on a baking sheet around 2” apart.
Bake for 12 minutes or until the edges are golden brown but the center is still unset.
Cool for 5 minutes on a baking sheet before transferring to the cooling rack.
Glaze:
Combine 1 cup of powdered sugar and 1 tbsp of water in a small bowl. Drizzle over cooled cookies with a spoon.
