1/21/2021If you are anything like me, you might love breakfast foods but find yourself too busy to cook breakfast or even eat breakfast on most days. Some days coffee is just more essential than food! That, my friends is why we need more breakfast for dinner. In my house, I try to make breakfast for dinner at least once a week and my family is usually pretty excited for it.To me, breakfast is the perfect wintertime comfort food. This week, I made homemade biscuits and sausage gravy and it was way better than the restaurant because I also try and pack in as many veggies as I can. So, I chopped onions, mushrooms, and garlic to add in the gravy, and as a side I made some green beans.Last week we had blueberry pancakes, eggs, and sausage links. I didn't make any veggies to go along with it however, I served some homemade chunky applesauce. We usually have waffles at least every couple of weeks and sometimes we have homemade jam on top or sliced bananas with maple syrup. I always try and make a double batch of these to stick in the freezer so my son can heat them up in the mornings.Another breakfast that we love having around here is omelets. Since we have hens here on the homestead, we tend to get a lot of eggs during 75 percent of the year. Omelets and quiche (AKA egg pie) are another great way to pack in some veggies and even use up some leftovers in the fridge. I like ham and spinach with cheddar, or mushrooms, onions and peppers. I have also topped cheese omelets with homemade salsa and that is so delicious. Breakfast sandwiches with fried eggs, gooey cheese with a slice of deli meat or a sausage patty are easy to make up in just minutes. Making up a few extras to have in the freezer can save you from swinging through the drive-thru too.Breakfast burritos or wraps are a yummy way to use up some leftover rice, and maybe some ham or bacon crumbles and they also freeze well for a quick breakfast to microwave in the mornings too. Sometimes we end up with a few stale pieces of bread that need to be used up, so they don't get wasted. This is when I would make French toast, or a French toast casserole with raisins (or leftover cranberry sauce around Thanksgiving). Who doesn't love home fried potatoes with a kielbasa sausage alongside sauteed mushrooms, onions, peppers, plus eggs and toast? I just try to think of how I can make breakfast foods healthy, tasty, and get the rest of the family to eat it and like it too. I could probably go on and on forever listing things I love to eat, what kinds of things do you like to eat for breakfast?
