I love French Toast. I used to be obsessed with it. Since I stopped eating whole eggs for the most part when I lost a lot of weight, I don't want to make something so fattening as French toast so I took my mom's old recipe and created a leaner version with mostly egg-whites and no butter. This recipe serves two people.
Ingredients
Leftover bread. A few days old so it's just beginning to stale but not so old that it's impossible to cut. The amount of slices will depend on thickness and the size of the loaf.
3-4 egg whites
1 large egg
1/2 teaspoon vanilla extract
1/8 teaspoon nutmeg
1/2-1 teaspoon cinnamon (to taste)
Spray oil or similar for the pan. Use something flavorless.
Directions
Mix the egg and the egg whites. Beat until fluffy.
Add the cinnamon, nutmeg, and vanilla. Beat until well mixed and fluffy. The egg mixture will look slightly brown.
Place the bread on a wide shallow plate and poor the egg mixture over it.
Allow the bread to soak for about 10 minutes, flipping it over every so often to make sure it is coated in the egg mixture.
Spray a pan with oil and heat on medium heat until a droplet of the egg mixture turns white instantly. Then add the egg-soaked bread to the pan.
Poor the remaining egg mixture over the bread so it soaks in and cook until light brown on each side.
Serve sprinkled with powdered sugar and drizzled with light syrup or a topping of your choice.
