Ingredients:
1 cup chopped bell pepper
1 cup sliced mushrooms
1/2 chopped white or sweet onion
6 oz of chicken in bite-sized pieces
2 tablespoons fresh holy basil
3 chopped dried jalapinos
3 minced garlic cloves
2 tablespoons sesame oil
1/4 cup sugar
1/4 cup rice vinegar
1/4 cup soy sauce
1 1/2 tablespoon sherry
1/4 teaspoon fish sauce
2 tablespoons lime juice
Directions:
Heat 1 tablespoon of sesame oil in the plan.
Add dried peppers, holy basil, and garlic to the pan.
Wait a few moments until the garlic becomes aromatic but before it becomes brown. Add the onions. Let the onions become aromatic.
Add the 2nd tablespoon of sesame oil with the mushrooms and bell peppers.
stir until the mushrooms begin to brown.
Add the chicken and let it cook until it is white on all sides, but not brown
Then add the mixture of the liquids and the sugar to the pan and stir.
Let it cook for 5 minutes or until the chicken cooks through.
Serve hot with rice.
