DEEP FRYER NOTES

I thought I might take a minute to talk about deep fryers.

Basically nothing could be simpler than this submersable electrical type commercial deep fryer.

It uses a thermostat to control the oil temp and a high limit to cut power to the unit should the

thermostat decide to fry the contacts together and keep on a truckin. Who likes burned chicken right?

So what do we look for? Simple: anything that does not have continuity when COOL is bad.Anything that does not open when HOT is bad.

The same applys for the gas version of this magnificent deep fryer. The typical gas fryer will have a fuse(or not) a limit, and a control thermostat. The system uses millivolt type gas valve. All the energy needed to operate the valve is produced by a Pilot Generator. (see another sublime page on this subject). If the control thermostat should fail to open before 550f then the high limit will shut down the fire. Should it fail, their is a fuse mounted under the burner that will melt and kill the pilot generator.

Another type of gas fryer is called a bleed gas valve type. On this version the thermostat has no wires but gas tubes. It opens and closes the flow of gas to the gas valve. The gas valve has a standing pilot with safety fuse in the mix. Neat right? Do not be intimidated about servicing a deep fryer. Easy money my friend!!!
