Trivero, Biella, Italy, 20194:45 min.In 1968 Giovanni Anselmo created a piece called Struttura che mangia (Eating Structure), consisting of a head of lettuce lodged between a block of granite and a small stone held together by a wire. When the lettuce dries out, the wire loosens and the smaller stone may fall. Whenever the lettuce begins to shrivel, however, it is replaced.
In 2019 when I encountered the piece, the lettuce was completely wilted. It appears that Salvatore, the man who for years has placed fresh lettuce there every week, was on vacation. So I decided to replace Salvatore in his duty, to be his ritual alternate.
