Last year we had a bountiful supply of zucchini from our garden, and we were trying to recover from the xmas holiday excess, so we used some of our zucchinis as a pasta substitute. Here is a recipe I have made a few times. It’s very tasty, simple and quick to make, and rather light in the calorie department.
I’ve also made it with chicken and mushroom sauce, and tomato and seafood sauce. It works really well and is quite filling.
(It has approximately 255Cal per serving, compared with a pasta alternative of approximately 514Cal.)
