I love this recipe. We have this almost every week. Its very quick to prepare and very tasty.
This makes about 4 servings. We most often substitute fish such as cod or hoki with frozen shrimps for the prawns, but sometimes I use cut up chicken breast.
Go easy on the red curry paste if you like it mild. I use a large amount (a handful) of basil when I make it, and sometimes substitute coriander. Very Fast Red Curry Recipe
