Easy Asian Chicken Salad

Looking for a low calorie meal we tried this easy Asian flavoured chicken salad which is great on the Fast 800 Diet*. Simple and fresh ingredients make this meal fantastic and filling.

Serves 3 / Avg. calories per serving = 201

Ingredients:

  • 250g bean sprouts

  • 2 x 200g pre-cooked chicken breast fillets, sliced (grilled, poached or steamed)

  • 1 long red chilly (or to taste), deseeded and finely sliced

  • 3 green spring onions, finely sliced

  • 1/2 cup coriander leaves, sliced roughly

  • 1/2 cup mint leaves, sliced roughly

  • 1/2 cup basil leaves, sliced roughly

  • handful of salad greens

Dressing:

  • 125ml (1/2 cup) coconut cream

  • 125ml (1/2 cup) water

  • 1 tablespoon fish sauce

  • zest of 1 lime

  • 2 tablespoons lime juice

  • 1 tablespoon caster sugar

Method:

  1. Mix the dressing all together and place in the fridge

(I put it all into a jam jar and shake to mix)

  1. Toss all the ingredients together without the chicken

  2. Pour the dressing over the ingredients and toss to mix

  3. Serve in bowls and add the chicken pieces on servings

  4. Enjoy :)


Change it up

For a different more substantial meal of avg. calories per serving = 390

  • Change the bean sprouts with 175g rice noodles

  • Covering the rice noodles in a bowl of boiling water and stand for 4-6 min (until soft)

  • Drain and rinse and toss as per step 2 above
