Figs roasted with Blue Cheese and Prosciuttio

Serves 4. Takes about 20 mins.

The heady perfume of the figs, the sharp tang of the cheese and the salty meatiness of the ham, plus the rather different textures of all three, combine nicely to make this lovely dish. Do 1 fig per person for a starter or 2 each with a salad for a light main course

8 ripe black figs

250g soft strong blue cheese e.g. Roquefort

16 thin slices Prosciuttio

Olive oil

Balsamic vinegar

2 tbsps fresh mint

  • Preheat oven to Gas mark 5/190C
  • Cut figs almost in half from top to bottom, leaving them still attached at the base
  • Cut cheese into 8 cubes. Place a cube in each fig, between the two halves. Squeeze each fig closed
  • Tightly wrap each fig in 2 slices of Prosciuttio, ensuring it is completely enclosed in ham
  • Place on a baking sheet, drizzle with olive oil and a little Balsamic vinegar
  • Bake for 10-15 minutes until the cheese starts to ooze
  • Serve with a salad, sprinkled with finely chopped mint, and the juice from the pan
