Beef Goulash
Serves 6. Takes a total of 3 hours
This is our favourite beef goulash recipe. It comes out more as a soup than a stew
1 large onion, chopped
2 Large carrots, peeled and chopped
1/2 celeriac, peeling and cut into a small dice
2 tbsps butter
1kg stewing beef cut into 2.5cm cubes
2 tbsps Paprika
6 sprigs of curly parsley finely chopped
1 tsp caraway seeds
2 bay leaves
1 clove garlic crushed
2 green peppers, deseeded and chopped finely
225g tomatoes, skinned, deseeded and roughly chopped
2 tbsps tomato puree
2 dried red chillis
2-3 large potatoes, peeled and cut into 2.5cm cubes
- In a large pan/wok gently fry the onion, carrot and celeriac in the butter for 10 minutes. Add the beef and cook for a further 5 minutes
- Stir in all other ingredients except the potatoes, and add enough water to cover everything (usually about 1.5 litres). Bring to boil and simmer for 2 hours, stirring occasionally
- Add potatoes and simmer for a further 10-15 minutes
- Discard bay leaves. Serve in bowls with bread and salad
