Tuna Steaks Teriyaki

Takes a little over an hour


Worthy of one of the better fish restaurants, this is a simple, elegant, incredibly tasty dish.


4 fresh tuna steaks

10 tbsps dark soy sauce

6 tbsps Mirin of medium sherry

6 tbsps dark brown sugar

4 tbsps finely chopped ginger

400g noodles

2 heads greens, ripped up a bit

1 tsp chopped thyme


  • Mix soy, mirin, ginger, sugar and chopped garlic, place in a baking dish. Place tuna steaks in mixture, swirl them around a bit, and turn them over. Leave for 45 minutes

  • Put noodles on to boil

  • Heat a little olive oil in a big pan or wok, add the greens and the cooked, strained noodles, stir gently till leaves begin to wilt

  • At the same time, heat a little olive oil in a frying pan or, preferably, a griddle, till good and hot. Add steaks, cook quickly on both sides till done to your liking

  • Put some of the marinade and the thyme into the greens and noodles, and serve with the tuna
