Cecile's Chocolate Brownies

Many thanks to our erstwhile housemate Cecile for giving us this lovely recipe.


200g cooking chocolate

250g butter in 1 cm dice

250g sugar

200g plain white flour

4 eggs

150g nuts of your choice, fairly finely chopped


  • Heat oven to 175C

  • Butter a shallow 10" x 6" baking dish

  • In a large metal bowl over a pan of gently boiling water, melt the chocolate, and when melted add butter . Mix well together

  • Remove from heat. Mix in the sugar, then add the eggs one by one

  • Add flour, mix well, and then add nuts

  • For brownies that are slightly sticky in the middle, bake for 20 – 25 minutes

  • Allow to cool before eating (if possible). Goes very nicely with a glass of ice cold milk
